Q: What are they like when its icy on the ground? Is the grip still good?

Don’t try it in ice, but it’s too slippery on the wet floor.

Q: Using the size guide I was recommended an 11 (my usual size) but these feel really loose. Still pretty loose wearing two pairs of socks. That normal?

I have quite wide feet and calves and these are a perfect fit for me (size 12). Perhaps they're better suited to wider feet?

I'm size 9 and found these just a good fit, not over sized. I think you would need the 12. If you find it a bit loose, just slip an insole into it.
