Chinese sausage, also commonly known as lap cheong, is used as an ingredient in quite a lot of dishes in southern China and Hong Kong. It is cured, dried raw-meat sausages which are required to be cooked before eating. There is a choice between fatty or lean sausages which gives various taste. Chinese sausage usually gives an extremely sweet favor and an emulsified texture. How to serve: Steam 蒸 Slice the sausage thin and then add on the top of the rice in rice cooker. Stir-frying 炒 Slice the sausages thin, stir-fry the sausage with oil in a wok for 1-2 minutes, then add vegetables / rice to the stir-fry. Simmer水煮或煨 Put the sausage in hot water, simmer for around 15 minutes until the fat rises to the top. There are many other cooking recipes for Chinese sausage as the sausage are pretty easy to cook.
