Product description We tasted many, many chistorras when we were looking for one to add to our range, but once we tasted this one, we knew the competition was over!Pagola is a small, family run producer that pride themselves on producing outstanding chistorra since 1940. The ingredients are simple and 100% natural and the result is delectable - just the right texture and flavour - differentiating itself from both chorizo and the standard Spanish red sausage.Chistorra, by definition, is very high in fat content, but this one tends towards the lower end of the spectrum which means the flavour is stronger and less volume is lost when cooking.Although chistorra can be cooked in almost any way, we strongly recommend frying on a medium heat. This allows the chistorra to cook through in its own fat and crisps up the outside, which is gives an almost crunchy texture on the outside together with a flavour verging on the sweet.
