Q: What are the length of the laces?

I haven’t measured them but they’re both laced up as far as I can and I can double tie both easily. In the past I’ve skipped threading them through the last couple of eyelets to give me more room to tie the shoes.

Q: Can you polish the toe?

Yes it’s leather so they can be polished.
