Purchased as a Gift, Will Buy for Myself Next
I purchased this as a holiday gift for my father, who is the consummate griller. He received them, and cooked them within days of receiving them. All I can say is that they are absolutely delicious. Let me tell you a bit about Bison (plains buffalo). Bison, as a federally-protected species, can't have steroids, hormones, etc. used on them like cattle can. They are not 'domesticated' in the same way that cattle are, either. They are farmed/ranched, but they are generally left on their own, as they can be quite difficult to deal with. They are larger than cows, and are much leaner as well. For someone who wants to know what bison tastes like, I always tell them, "Imagine the best beef you've ever had. This is better than that." It's more expensive than beef because of the reasons I've outlined above, but if you ever have the chance, try it. You'll love it. Anyway, these filets are a perfect serving size for a meal with some side dishes. If you just want a big hunk of meat for dinner, you'll want two. That's a pretty pricey dinner, though. You want to sear these in a hot pan, or cook them on a hot grill quickly. Filets need to be pink in the middle, and these are no exception. These are incredibly tender, and don't require much seasoning either - I prefer a bit of salt, maybe some garlic, and a little melted butter. Mmm...
