Best shucking knife I have Ever Used
I just had our annual bake with a raw oyster bar, and I thought I would update this review. Our friends brought some new knives this year, and this knife is still the best. I have tried so many other types of knives, including other models from Dexter-Russel, and this knife outperforms them all for in-hand shucking. There are two factors that make these knives effective: 1) the dull, small, rounded point at the end, and 2) the narrow, yet durable blade. That, in my opinion, is a magical combination.First, if you are shucking in your hand (i.e. not on a countertop) you do NOT want a sharp blade or a pointy tip. When the knife slips, a sharp, pointy knife will hurt you through your shucking gloves, especially after jabbing your hand a few times. This point is sharp enough to get into the hinge of small Kumamoto or Sweetwater oysters, but not painful when the point jabs you in the shucking glove.Second, the narrow and strong blade makes inserting the knife into the oyster hinge easy, without breaking the rest of the shell, especially on smaller oyster species, which I happen to enjoy more. I have found that thick-bladed knives are harder to fully insert into any oyster hinge, and you are more likely to make a mess of the shell with the smaller oysters. This knife minimizes both of these issues.Finally, if you don't believe me that this is a great knife, this used to be the knife that Hog Island Oyster Company would sell to customers at their farm in Marshall before switching to a wide-blade style knife made by R. Murphy. I personally find their new knife harder to use.

Still a five star product. Shucked an oyster every night in preparation of thanksgiving.Works like a charm.

Works on big oysters
Washington state requires you to shuck your oysters on the beach. This knife really gets into the hinge and once you break that, you are good to go. I've tried a couple of different knives that are a little bit wider and they don't work as well.

VALUE
There are items that are just as good or better quality-wize and function-wize at much, much more reasonable $$. Dexter-Russell is a quality name brand, but it is severely overpriced.

Great knife
Great product. I put oysters in boiling water and remove them quickly. This way, it's easier to open the shell but the meat is still in raw.
