Great tasting pasta
First off, the cooking time is 10 minutes for the pasta and this info is on the front of the box, lower left. 10 minutes was perfect for this pasts, just slightly al dente as we like it. This pasta was much less starchy that the pasta I usually purchase and the texture was great. While it is too expensive for me to buy for every meal, I will buy it for special occasions

Very high quality pasta, but exorbitantly pricey
This tagliatelle is phenomenal when it comes to taste and mouthfeel. The pasta just mops up sauce like nothing else, and you have a nice bite to it. It takes a smidge longer to cook since it is thicker than store-bought offerings and requires you to be more attentive with stirring. Aside from texture and sauce absorption, this pasta just tastes a bit better overall. Maybe the flour that was used? But as much as I love the taste and texture of this stuff, the elephant in the room is the price tag. This pasta is expensive, no other way to put it. I can definitely tell the difference between this pasta and typical stuff from the store, but at what cost? This stuff is 5-10 times the amount you pay in-store. Yeah, you can have an amazing bowl of pasta with a box of this stuff. But there's no way I can recommend this to someone. If you really love cooking and want to make a particularly special pasta dish once, just maybe then.

Very very high quality
These are definitely really awesome noodles. They hold onto sauce REALLY well and have a really nice texture. My only complaint is they seem to take FOREVER to cook. Like, way way way long. First batch I made (half the box) took 25+ minutes in boiling water. Second batch took around 20 minutes in a heavily-rolling boil. They also "inflate" a ton, getting much much larger, which makes it fairly easy to tell when they are close to done since for the first 90% of the cook time they only grow a tiny bit then, then in the last few minutes they get much bigger much faster. Biggest issue I guess, is the price. If these were 1/3rd the price, possibly even 1/2 the price, I would considering buying them on a regular basis, since I generally try to eat low carb and noodles arent something I eat often as a result. But at the current price when I ordered, which was around $10/lb, that is crazy. Cheap-but-ok-enough noodles at any grocery store are literally less than 1/10th of the price. If you are a huge foodie you may be able to notice a difference that warrants the MASSIVE price, but I cant. However I do not think these are a waste of money inherently, just for someone like me with a plebian palate I think it may be outside of my area of expertise ha.

Beautifully premium quality pasta, great mouthfeel
This tagliatelle pasta is truly elevated compared to standard grocery store pasta, and you can really taste the difference. Whether this is worth the premium is up to you, but I can't fault this pasta on the quality it brings. The box holds 500g of pasta (a little over a pound) but is quite large. It shipped in an envelope, so it did get a little smushed. While the pasta was fine, considering that pasta is susceptible to breaking, it would have been nice to have more protection during shipping. The pasta itself has a distinct texture to it from the bronze dies that were used to extrude it. When cooked, this texture is what really grabs the sauce once cooked. As others have mentioned, there are no cooking times on the packaging so you have to play it by ear. This pasta is very starchy, so it tends to stick to itself and the walls of the pot more than other pastas. I recommend stirring more frequently than usual to prevent sticking. Once cooked, the tagliatelle noodles are beautifully chewy, and cling to a layer of sauce evenly on every noodle. The flavor of the noodles itself is quite prominent in the final dish, and does not fade into the background. While this pasta is too pricey for me to buy regularly, my husband and I really enjoyed eating it and would recommend it for buyers of excellent quality dried pasta.

Some of the best I’ve had
This pasta is seriously one of the best I’ve ever had. I’m not sure why as it’s just your standard pasta, but what makes it stand out is the texture of the noodles are not gritty or mushy… it has a good chewiness to it, and flavor is more grainy. They cooked up very well, and we’re not easy to overcook. I like that there are straightforward ingredients and none of the extra added unnecessary stuff like you see here in the states will definitely be ordering this again.
