I love lentils, my username should be lentilLover104, alas I only recently discovered this love. You should definitely try these: they have a strong chewy bite almost like farro, they are great if you are making dosas or pancakes, and can make a mean biscuit.:)

Urad Dal
I have often used chana dal but this was my first experience with udad and I decided to try the recipe for dhuli urad dal that was on the back of the sturdy cloth bag the dal arrived in. The recipe had some ingredient repetitions so I adjusted as well as I could but I followed the process exactly. The dal was to be soaked for 15 minutes and drained. Then simmered in water and milk for 10 minutes and then the dal and all additional ingredients were, according to the instructions, "cooked for some time".After simmering for 45 minutes, the liquids in the pot were almost completley absorbed and had cooked down to a thick (and delicious) sauce. The dal was still tough. Not hard and crunchy but incompletely cooked. The dal was packed in July 2032 (8 months ago) so it shouldn't be old. I used soft water in the recipe so it wasn't a hard water issue. Upon researching Urad, I found recommendations to either soak them overnight or cook them in a pressure cooker. Armed with that information, I soaked 1/2 cup of dal overnight and clearly, that fixes the problem. The recipe on the bag is a keeper, but 10 minutes of soaking is not nearly long enough to soften these dal. You need to plan ahead to fully enjoy.

Large bag of high quality dal
It's a big 4 pound bag of high quality urad dal. I followed recipes online and it made perfect dal makhani in my instapot.The quality is good, the lentils are intact, and there was no debris present. It comes in a traditional burlap bag, which is fine but I transferred it to an airtight plastic container.This 4lb bag will last me several months of regular cooking.Overall - great quality urad dal. It would only be better if it was certified organic.
