A boule made using 500g flour fits perfectly. With an electric oven I heat the lid and pan placed on two different racks to about 260C then put the proven boule into the pan removed from oven, slash, put pan back in oven and place lid on top so lid has not left the oven. After 20 mins I remove lid leaving the boule in the pan but keep lid in the oven on second rack so it stays hot and just about ready for making second boule. After taking lid off I turn oven down to about 230C. Total baking time needed is about 40 minutes. For the last 5 minutes of this time I turn oven back up to 250C to start getting it ready for the second boule. **Q: Is it possible to wash off the 'soy based vegetable oil', even though it has been heated to such a high temp?** A: it doesn't wash off, because it had effectively become a polymerized coating. It's quite difficult to strip the seasoning off. you shouldn't wash with soap, because you want to keep the oil from the food that you've cooked as a light coating (just enough to make it shiny, not enough to make it sticky). Lodge say this about their soy coating if you are concerned from an alergy point of view: Lodge uses a soy-based vegetable oil to season our cookware. The oil is highly refined, and all proteins that cause soy-related allergies are eliminated. The oil contains no animal fat, peanut oil, or paints. **Q: Can you remove the handle** A: No, handle is integral to the unit. It's also very heavy so the handle is invaluable. Without it getting the unit in and out of the oven would be harder **Q: Would this pan be big enough to cook a whole chicken** A: Yes, although not massive one. I regularly cook a 2 kg one and it just fits. I have made a rack about .75 inches high to keep the chicken out of it's own fat.
