Will the lid stay on when pouring? Does it have a function to seal or unseal, to keep the fridge taste out of iced tea?

Yes, the lid stays on while pouring. There is a 'rubberized seal' all around the rim and in the short time I've used it there were no spills. There are two opening in the side of the cap: one a larger opening allowing free movement of anything in the liquid. The second opening, on the opposite side, is a rectangular area of holes to allow only the liquid to flow out. If these two openings are rotated away from the pour spout area, a decent seal should be made to keep out unwanted tastes.

Can I pour Hot coffee directly into this pitcher without it cracking?

I have not tried pouring anything hot into this pitcher but according to the item description the jug can withstand temps up to 302 degrees F and you can pour boing water into the pitcher. If you coffee is hotter than that I would say a big NO.

Im guessing if its stove safe that its safe to use as a sun tea maker? Can someone validate this?

I've not been brave enough to heat it directly on a stove, but I'm sure it would be good to make Sun Tea.

Can the sealed pitcher hold carbonated / sparkling water in the fridge?

The seal is not airtight, so those types of beverages would go flat in this pitcher.
