Q: Please could you explain what you use to produce the kefir? What kind of sugar and what kind of water? Can I use boiled tap water or bottled?

Hi I use brown natural cane sugar and bottled natural water I leave mine 48hrs and it goes fizzy i like the taste without any fruit or flavourings added. Good luck with yours.

In the first three days the volume of my initial 50g more than quadrupled. Every week I reduce the active "seeds" (or crystals as I call them) ack to 50g (and eat the spare with a dash of fresh fruit and coconut milk, or plain). So there's no need to buy extra initially! PS I also froze some as an emergency backup. Oh, and if you stick them in the fridge withou feeding them in sugar water, you'll starve them to death. Poor things! 😎

Q: can i use this to make fermented vegetables?

Yes, you can add kefir grains to the brine and vegetables and it will help to speed up the fermented veggies and add extra bacteria to the ferment HOWEVER this process also kills off the grains so it is only suitable for your spare grains (although its a handy way to use up the extra grains) you should not use the grains you are brewing with as they cannot be used again.
