Great for processing deer meat!
Works great as a fish filet knife, but I bought it for when we process deer meat! Super sharp!

NICE!
I was immediately impressed with the feel . . . comfy grip that is non-slip, good weight and balance.I washed it, gave it a half-dozen swipes across my steel and set off to bone out a chicken.SUCCESS! Easy-breezy. This knife is scalpel or razor sharp and easily cuts as a boning knife should (my Grandpa was a butcher and I learned from him using his pro knives).Actually for boning a chicken I would prefer a smaller version (4" perhaps) of this same knife, but for beef or pork or as an all-around/general purpose boning knife this knife is perfect.

I use these knifes a lot in my comp cooks. They seem to be good enough and at a price point to match.

I am a "best bang for your buck" kind of man. I only buy top name brands when it is simply the best product of its kind. I did a lot of research before buying this and I was still slightly skeptical because of how inexpensive they are. For $17 I figure buy 2 as backup knives because I process my own deer and resharpening while in the middle of butchering eats up quite a bit of time. The knife I mostly use cost $70 and it will be hard to go back to it. These performed flawlessly from deboning to fileting and trimming the fat and tallow without any loss of edge. Hands down the best processing knife I have used, and for the price if they ever wear down or get damaged it is no sweat to replace.

Super Sharp
I was waiting on this knife to arrive so I could trim a brisket. It arrived and was crazy sharp out of the package. The handle is so easy to grab and turn the blade with. Super ergonomic. If this thing can keep its edge it’s a steal at $15

Bought 3 different knives and this was by far my favorite
I purchased 3 different boning knives from Amazon to use to butcher 2 steers. This knife arrived significantly sharper than the others, and seemed to hold its edge better than the others. I used this knife for skinning and gutting, and then weeks later for breaking down the quarters. I did quickly hit it on a honing steel a few times, but even after cutting through joints and hitting a lot of bone, this knife just kept going. After being used almost exclusively to completely cut up two steers, it is still surprisingly sharp.

Very Sharp
Very practical and a sharp cutting tool, as it can cut through a tough piece of beef like it is butter. I was expecting a blade that was more flexible for use in deboning, but it is still workable since the blade is nice and sharp. The knife is larger than expected but not so large that it becomes clumsy.
