Razor sharp, but heavy. A good knife for the price.
Mine arrived sharp enough to shave hair off my arm so no problems there. The knife is heavier than ideal for chopping veggies but at this price point I'm considering that a non issue. The knife handle feels good in the hand and cuts nicely. I love the single bevel. This type of knife is made for shredding/julienne cuts, or making thin meat cutlets. Its great for that for the average home cook. If I were going to be using this in a restaurant I'd get something lighter and likely way more expensive.People complaining about it dulling need to understand that for this price point, that's going to happen. Learn how to use a wet stone, problem solved.

After 18 months, still amazing
This has become my go to knife. I use it for nearly everything. It's proven itself durable and easy to care for. And, because of the single bevel, sharpening the edge is super simple.More than anything, the ergonomics are just fantastic. It's well weighted, and when held correctly, very comfortable. For most tasks, I hold the knife steady by firmly pinching the base of the spine with my thumb an index finger, while using the rest of my fingers and palm to grip the actual handle. This technique was taught to me by a Japanese chef who first introduced me to usuba style knives. This simple change in grip, along with this knife, have made me much more adept in my everyday slicing, chopping and hacking. So, the knife is durable, easy to sharpen and it's reasonably priced. It's nearly perfect. My one small complaint is the handle is a little too smooth. A little bit of texture would be appreciated. But even with that critique it's a five star knife.

Sturdy and well made, but blade geometry is a little off
I am overall very pleased with the knife, particularly considering the low cost compared to 'professional' level cutlery. It's a very attractive knife, and seems really well made. All the seams between the metal and wood parts are very tight, and it feels very solid. The blade is rather thick for a vegetable knife (2.12 mm at the spine), which makes it somewhat heavy. It wasn't particularly sharp out of the box, but certainly usable. The primary angle on the blade is only about 7°, but the secondary angle is far too steep to be really sharp (although it will hold an edge very well). The real issue is that the back isn't actually flat, like a chisel. There's a slight bevel, presumably from the final polishing step (not a hollow grind urasuki, but more like a very slight back bevel). The bevel makes it impossible to remove the burr generated when sharpening without maintaining the back bevel. I suspect most people won't mind, but I expected to sharpen the knife the way I sharpen a chisel, and that's just not going to happen. Instead of diamond lapping plates, use water stones and let the 'belly' that develops in the stone take care of the burr removal.

Excellent purchase. I love it.
I love it, it is a very good looking knife, the craftsmanship is excellent, the sharpness is great, I love sharp knifes but this is different, that much that me and expert cooker I cut myself washing it. The price is great for the quality of it. The handle is very nice to the touch and the eyes. The shipping was fast and on time and the packing excellent. I highly recommend this item to anyone who love a good quality knife.

It's a hidden gem!!
My wife wanted a vegetable slicer "just like on the Food Network". I found this knife at a a great price. It's a solidly-constructed knife, razor-sharp (be careful when you wash & dry this knife). We use it for any cutting, not just vegetables. Cubing meat is a snap. Cutting thin slices of bagels is not a problem.Wish that a blade cover came with the knife but I used a slide-on report cover (https://www.amazon.com/Sliding-Capacity-Presentation-Folders-Organizer/dp/B07FVJJGDG/ref=sr_1_9?dchild=1&keywords=cover+for+paper+report&qid=1634570235&sr=8-9)

Dull
Nice blade and handle, excellent weight and balance. There was a nice edge of the blade and was very sharp. After getting the knife it processed many tomatoes and other vegatables for sauce. Since processing the vegatables, the blade has become blunt dull. Unlike other knifes in my possession forever, the knife now won't cut a ripe tomato. I know to sharpen a blade to maintain the edge, but I've not have a knife that soft vegatables dull so quickly.
