Great Gravy in a Flash!
This easy-to-use mix makes GREAT GRAVY that really, really, truly tastes homemade. For years, I made gravies "from scratch," till a friend introduced me to this amazing time saver. I've tried both this Country Sausage flavor & Pioneer's Peppered Gravy mix & this one's my favorite.My husband's from the Southland, where chicken fried steaks and biscuits and gravy are required eating, so learning to make good gravy was a must. In my experience, people from Northern Climes tend to mis-understand this "white gravy" and how to properly cook & eat it. No, it's not intended to taste like bland white flour paste (and this brand does NOT). But here are some tips, just for those interested:1. Here are the directions for a typical batch, from the package: just boil 1-1/2 cups WATER. Mix the contents of the package into 1/2 cup COLD water. Then add the gravy/water mix to the boiling water, reduce heat, simmer 2 minutes & done!2. Here's how we do it, to make TEXAS GRAVY: as your 1-1/2 cups water's boiling, grind about 1/2 teaspoon black pepper into the water. Let it boil a minute or two (this will infuse the pepper into the water, intensifying the flavor). When you mix the gravy mix into cold water (I use a pyrex mixing cup like this Pyrex Prepware 2-Cup Glass Measuring Cup with Lid ), grind your favorite amount of freshly ground black pepper into this mixture & stir well (believe it or not, I use another 1/2 teaspoon--hubby likes it HOT). I use a French whisk (one with a rounded handle, so it can be rubbed between the hands to mix thoroughly--like this: Kuhn Rikon 10-Inch French Wire Whisk). Then whisk this into the boiling water/pepper mixture. I reduce heat, then continue to simmer for about 5 minutes. This thickens it and, in my opinion, gives the gravy a deeper flavor--the color will actually darken a bit. Remove from the burner & you're done! Easy, breezy, especially compared to "scratch" gravy. The flavor's great & particularly good with Chicken Fried Steaks, Fried Chicken, Mashed Potatoes, and, of course BISCUITS & GRAVY. Yum; A++ for simplicity, convenience, & great flavor!P.S.
