it would cool off way too much
This is the fourth fryer I've bought in the last 6 months. The first three did not perform very well. The first ones I purchased could not recover heating very quickly. I have had a big problem with other fryers when food goes down into the hot oil, it would cool off way too much. Even with a very small amount of food. The Adcraft DF-12L has NO problem maintaining heat. I bought and use this for home use. We had the family over for the Packers / Seahawks game (There's always next year for my Packers). We where all surprised on how good the fried food was. Drum sticks, wings, french fries, mozzarella sticks. All turned out great. The oil stayed hot and that's the golden rule when it comes to deep frying. The valve to drain the used oil is done great. It was really easy to clean when everything cooled. Here is the part that could present a problem for possibly some people. The fryer requires a 20 amp, 240 volt supply. I am a licensed electrician with my own electrical contracting company. If anyone buys this fryer and gets it wired meeting electrical codes. I would bet you'll love it.

I wired it to a dedicated 20 amp breaker to avoid any problems tripping the breaker.I bought this unit open box elsewhere at half price.On my first use I cooked 18 large chicken wings I rinsed off ice crystals and patted dry cooked under 10 minutes crispy just like any you've had.Then I cutup a half chicken breaded the 4 large pieces of chicken with flour & spices a KFC recipe I googled it cooked through in 8 minutes my instant read thermometer showed 160 degrees in th center of th largest piece.It came out so crispy I could snap a piece of skin off like a potato chip Excellent!!I lastly fried 2 large russet potatoes I cut up with my french fry cutter (caution it started to flow over the sides picked the basket up and then back in) The unit was filled to max oil line (lesson learned) the fries were rinsed & patted dry cooked crispy 4 minutes 3/8" cut.This was something I could not accomplish on my gas stove top! Using peanut oil in a 8 quart pot. Not even close!

Well built fryer definitely buy again
There is nothing to dislike . it holds temperature perfectly. It is overpriced, I just bought another one for a different location from kitchen-monkey dot com 217.00 free delivery ..
