Santa Maria BBQ Rub – Santa Maria, California is in Santa Barbara County, which is the mid-coastal part of California. They cooked their beef in earthen barbecue pits with local red oak, with the meat skewered on metal rods. Santa Maria style barbecue is beef sirloin tri-tip, period! This has become one of our favorites, as it is very simple, but very good. Use high quality, well-marbled beef sirloin tri-tip.
