- HOLLY HONEY: The gallberry low bush (Ilex Glabra) is a member of the holly family. The plant produces small, white flowers that peak soon after the tupelo season ends. Some of the local residents call it "Holly Honey," so we do too.
- SOURCED FROM: The lowbush gallberry grows wild in the abundant pine forests of Northern Florida. That means we always have a fresh crop on hand!
- TASTE PROFILE: Raw unfiltered holly honey is extremely light in color; in some years it can be Water White. But the color can vary from year to year from Water White to Light Amber, based on other nectars that the bees might collect during the gallberry bloom. It has a very pleasant floral flavor, with faint smoky notes. It resists crystallization, and some of our customers actually prefer our holly over tupelo honey.
