Best keto cake mix I’ve tried. Easy peasey to make.. just add eggs & butter. I didn’t cook it for the 35 minutes.. started to go brown at 25 mins, so I took it out. So keep an eye when cooking

Red velvet cake for keto newbies
Purchased the red velvet cake to make a birthday cake for my type 1 diabetic and coeliac six year old niece. Paired it with home made Keto cream cheese frosting.Really quick and simple to make for a beginner like me. You need 3 eggs, 80g melted butter or oil, a tablespoon of water and randomly, a teaspoon of vinegar. I don’t understand why the vinegar is needed, but presumably it activates something, and you can’t taste it, so trust the recipe and go with it.The coconut flour means this looks quite gritty once you’ve mixed it all up, but don’t worry, because it’s not at all gritty once it’s cooked. I had to give it an extra five minutes in the oven, because it was still a bit wobbly and gelatinous after the recommended cooking time, but that may just be my oven. Don’t go too much longer though, as my sister warned me that these cakes with low carb flours are very easy to overcook, leaving you with a dry texture.It does not really rise, as you can see from my photo. Mine was probably not a lot more than two inches tall. More of a cheesecake height than cake. However, it was enough to cut it and put keto cream cheese filling in the middle, and the crumb structure was very similar to a conventional cake, so it held together well even when I cut it into two. If you’re going for a presentation cake, you’d need two packets of these to get it nearer the height of a standard cake.Taste wise, it was fine. Not especially sweet, and if I’m honest, I thought it needed the extra sweetness from the frosting (I used erythritol sugar substitute). Having said that, as a non-diabetic, I may just be used to higher levels of sweetness than someone who is used to a low sugar diet, so ignore that assessment if you’re used to sugar substitutes. Texture was good, in comparison to some of the other brands’ keto cakes which we’ve tried my niece on. The verdict from the family was a big thumbs up, and my niece was desperate for another piece as soon as her sugars levelled off. You don’t get a much better vote of approval than that.Overall, we were impressed and would definitely buy this again. So convenient, and tasty. It made my niece’s day. Four stars simply because of the eye watering price (I know diabetic and keto ingredients are expensive, and we’re paying for convenience here as well, but please make them more affordable - it’s not a diabetic’s fault that their pancreas failed, and they’re punished enough with injections and lifestyle adjustments!) which puts it out of reach for a lot of people who would love - and deserve - to try such a good product.

Surprisingly tasty
It's important to judge low-carb products fairly - if you expect them to taste exactly like the full-carb equivalent, you will always be disappointed. But, making suitable allowances, this is really quite impressive. Both flavour and texture are very pleasant. It's easy to use. There's a good taste of vanilla with a hint of almond and coconut. It doesn't have any obvious erythritol aftertaste, and doesn't taste too coconutty, which keto food often does. Nice fluffy texture. Fills a 20cm cake tin nicely. With some whipped cream and some low-carb raspberry jam (e.g. from CarbZone) it makes a cracking Victoria sponge.Things to be aware of: while it is low carb, it's not exactly low-calory - keto food hardly ever is, of course, because of the fat content; and the price is quite a bit higher than a conventional cake mix.But all in all, I definitely recommend it. I've tried a few low-carb cakes, and this is the nicest I've found so far.

Disappointed.
I was really hopeful that I had found a low-carb cake mix to satisfy sweet cravings, and the wish to feel normal in having a piece of cake when I am on a low carb diet. I didn’t find that this was the solution. The cake certainly mixes together very easily and the instructions are also easy to follow. I baked the cupcake version rather than the whole cake version. It made 12 cupcakes. - cupcake size, not muffin size. The flavour is okay, although I would have liked something with a significantly greater lemon Tang. The texture of the cake is extremely dry and almost impossible to eat without a good dollop of sugar-free icing. I followed the recipe to the letter and they were not overbaked. Nonetheless, they were in extremely dry cake. It’s also worth noting that the mixture makes one cake as in one circular layer of a cake so if you want to make a cake like the one in the photo on the front of the packet you would need to buy more than one packet! This makes it a very expensive baking project.

Amazing
I have been on a Keto regime for years and experimented baking SO many things. I wish I had found this sooner! It actually tastes like chocolate cake and quick and easy to use.

Impressive results and ideal ingredients.
I have been controlling my type 2 diabetes for five years now using a keto way of eating.This has meant cooking things from scratch and trying numerous convenience keto products and invariably being disappointed with the latter.This is the holy grail of keto convenience. The ingredients are all exactly what I would choose for myself and the product exceeded expectations.I followed the instructions exactly - using melted goat's butter and vanilla extract. The trick is to whisk the wet ingredients and then fold in the dry ingredients gently in order to incorporate them completely. The mix should be dryer than you would expect from a non-keto mix.I could only fit 11 cup cake cases onto my baking tray and so I divided the mix carefully between them and smoothed the tops down slightly with a silicone spoon.Then I baked them in my air fryer oven on the bake setting (140C) for 22 minutes.The results are pictured.Delicious cakes - maybe a tad over sweet for my tastes but that was compensated for by serving with plain double cream instead of a sweetened buttercream type topping.My non-keto husband enjoyed these too.I have the lemon pack to try next and if they are as good as these I will probably be working my way through the entire range. I will buy these again. It is so nice to have the option to make these without always having to make everything entirely from scratch.
