Delicate
Buyer beware, this knife is delicate and chips easily. Not worth the money and will never buy shun again! I have about 9 shun knives but now I will change to a more durable knife. I’m a professional chef, and these knives are not made for a chef, it’s more for looks.

The handle smells like formaldehyde
The handle smells strongly of what I'm guessing is formaldehyde. I touched it, and my hand smelled like formaldehyde. I washed it and dried it, and it still smelled like formaldehyde and now my dishtowel does too. I don't want to use it near my food, so I'll return it

Wow. Just wow.
I'm a culinary student and my $20 chef knife just wasn't getting it done so I decided to upgrade, and I'm OBSESSED with Shun now. Obviously I don't have a lot of experience with other nice brands so I can't make that comparison, but my teachers do and when I showed them my knee knife many told me Shun is their favorite brand, so that says a lot in my opinion. I love how ergonomic it is. It's just a joy to hold and use. It's so balanced and lightweight feeling, it stays sharp for such a long time, and the 6" blade makes it a lot easier for me personally to get accurate cuts right. Like if you're trying to do a julienne and you're getting graded on it, I can wholeheartedly recommend this knife. My performance in that area has definitely gotten better since switching from 8" to 6" and this particular knife is just by far the best I've ever used. If you're hesitant to spend this kind of money like I was, keep in mind that shun has a lifetime warranty on all their products, so ideally you'll only make this purchase once and it'll last you forever :)
