This fertile volcanic soil produces olives of exceptional flavor. In 1948 Antonino Scalia founded one of the first olive mills with screw pressing, allowing them to produce oil from their family groves and other small local olive producers. To this day, Scalia's olive mill technology remains at the forefront of production. Antonin's son, Carmelo, carries on the tradition at the family mill. He is also a European Community National Olive Oil Taster.Scalia's mill is a high technology plant which uses cold extraction and working with the reduced presence of oxygen. Olives are rigorously selected and hand picked, then processed the same day as picking.
