Misleading Packaging -- This Product IS NOT Low Carb -- LIES
I bought this for my Type II diabetic family. It's expensive but I wanted to treat them to pizza. The packaging says 13 Net Carbs on the front of it. Their own website lists this as "Paleo Thin® Pizza Crust Mix (Gluten)(Lower In Carbs)(Grain Free) (2 Pack)." I made the pizzas according to the packaging. First off, you should know that each bag makes a single pizza (so two bags make two pizzas). I was surprised by how small the pizzas are. The prepared pizza from one entire bag is probably enough food for 2.5 people (two adults, one toddler) tops, versus a standard Medium pizza which could feed 3 adults. My husband could have eaten the whole thing. My main complaint is that the packaging and listing on the Julian Bakery website is a lie! This might seem dramatic, but high carb food is dangerous for diabetics and I feel terrible making a product that is high carb and unknowingly serving it to them. Each pizza is supposed to contain 12 servings with 13 carbs per serving (1 ounce)! It's very misleading to list 13 carbs per serving, when the serving size wouldn't be enough to feed a toddler. If you made an 12" pizza with the single package, one slice out of the 12 is one tiny slice that's 1" wide yet 13 carbs). On Domino's site I can get a 12" pizza on thin crust about the same thickness as the Julian Bakery crust and 1/8 of the pizza is 12 carbs. So I could eat a Domino's pizza, save a ton of money, eat more food, and eat fewer carbs. To me, this is deceptive and dangerous marketing. It honestly makes me furious. It's fine to market something as Paleo, but to market it as lower carb is a straight up lie.

Not low carb - serving size is misleading
I bought this because I’m on a low carb keto diet and this came up in my search for keto products. I realize it doesn’t say keto anywhere on the packaging or on the amazon product page but it’s clearly trying to market itself as low carb with the net carb count displayed boldly on the front of the package. What they don’t tell you on the front of the package is that a serving is 1 slice of pizza. There are 12 servings per bag. At 13g net carbs per serving this really isn’t low carb unless you make a homemade pizza and only eat one slice... which nobody does. My advice to this manufacturer is not to advertise net carbs like that or make the serving size clear on the front of the package. I have bought other low carb products from this same manufacturer so I figured this would be similar.

BEST low carb pizza crust out there!
We have made pizzas with this many times and it always turns out perfectly. I do add a bit more water to my dough than recommended on the directions, and I add some garlic salt and oregano to the mix as well. I haven't ever tried to roll it out, I just butter up my hands so the dough doesn't stick to me, and I just pat the dough down into a pizza-ish shape. I have one son who has dairy allergies, so we use "So Delicious" brand Motzarella on his pizza. The crusts have always turned out perfectly for us. They are semi-thick and have a chewy texture. Feels like cheating even though it's not. This dough has made our low carb lives so much happier while on the keto diet.

Excellent Pizza Crust
I've been following an ancestral diet for over ten years. A year ago my girlfriend and I decided to try this pizza crust. I hadn't had pizza for quite a long time. This has become one of our new favorite "treat" meals. Yeah, it's hard to compare this to the pizza you get in NY or in Rome but hey, it works just fine, it doesn't taste like crap and it's super easy to make. We use a pizza stone when baking the crust and the pie with all the toppings. It is a little on the expensive side IMO for what you get. Whatever, most grocery items with the word "paleo" on them are going to cost more than the non-paleo version. I'm ok with that. Until something better comes along this is my go-to pizza crust!

Pleasantly surprised!
Up until now, the price deterred me from buying any kind of pre-made paleo mix, but it's totally worth it. It saves me a TON of time, it's easy to make and the texture (and taste) is better than any of my homemade crusts. We've tried a plethora of crusts, from coconut/almond flour to sweet potato to cauliflower. All are somewhat time-consuming and didn't turn out half as good as this! It's worth every penny and I'm so glad I finally bit the bullet to try it!

It works great, if you know what you’re doing. Read-on...
Definitely on the pricey side, but it works great if you’re looking for pizza on a low-carb diet Or gluten- free diet. Do not attempt to knead the dough with your bare hands - first coat your hands (and the rolling-pin) with a generous amount of olive oil. Then it is a breeze. I like to roll the dough out on a flexible, copper-infused, silicone baking sheet. A thin layer of oil on the baking sheet also helps the browned-dough release, easily.

It does the job
I can't say this stuff is wonderful but it does do the job. i made a 14 inch pizza loaded with sausage, tomato sauce, cheese, onions, peppers, mushrooms, and basil. The crust dough was pretty easy to work with and baked up nicely. It did get slightly soggy on the leftover pizza but so would regular crust... it tastes fine and supported all the toppings I loaded on. I've made it a regular item in our diet.

Pizza our way
A little difficult to work with, but the taste was good and the pizza came out fine. Did not precook the second time because the crust was too crispy the first time. Just prepared all the ingredients for pizza piled it on top of crust and cooked the pie for about 9 minutes. It was better the second time.
