A condiment for everything. It is salty, not vinegary. Has an umami vibe. Enhances flavors without adding a lot of flavor on its own. Just be mindful that it adds a salty taste and 410 mg of sodium per tsp.I use it on vegetables, sauces, tofu, dressings

Excellent for a soup I make
I use this in a vegan broccoli cheeze soup I make. I don't use it a lot as it is very high in sodium, but it really has excellent flavor!

Great on salads
Just sprinkle a few drops on a salad with a little olive oil and lemon juice and you have a very tasty salad! It is easy to use and adds so much flavor! Use it on halved avocados and it really brings out the flavor of the avocados. There are so many uses. Enjoy!

Unique, Alkaline Condiment
"Umeboshi" is a food seasoning which is famous for its highly unique, tart taste, which is the product of a Japanese pickled plum."Ume" ("plum," or "wild plum"), is the fruit of a tree that grows in Asia.. This tree fruit is known as the "Japanese apricot," which is thecentral ingredient of a unique Japanese condiment or food known as "umeboshi." a condiment which is a traditional, very popular, and widely used in Japanese cuisine.Umeboshi is widely used in Japan as a seasoning applied to rice consumed as a breakfast food. Captures the flavor of umeboshi very well!
I love this ume vinegar so much! Umeboshi are one of my favorite condiments and this vinegar really gives off the flavor of the actual pickled plums that I find myself craving.I purchased this for cocktails and I’ve been playing around with mezcal, gin, and plum wine drinks using a dash of this vinegar + a shiso liqueur I found in California. I can see this being good in a dipping sauce or salad dressing as well.As others have noted, this vinegar isn’t super “vinegar-y.” It’s more like a saline/salty solution. If you have tried umeboshi it’ll be pretty similar to that taste, just a little more salty and less tart than the actual thing. Personally that’s what I wanted, but please keep that in mind if you purchase this product.
