The secret for paella... Don't be stingy with the saffron, use plenty!

Do you cover the pan while the rice cooks in your paella pan?

NO, do not cover it!!! You also do not stir it! Give the pan a shake every once in a while. The recipe that I usually use has you take the pan off the heat when the rice is cooked and cover it with a clean dish towel for 5-10 minutes.

Can this rice be used for other rice dishes?

I don't see why not. It is a short grain rice perfect for forming the "soffrito" at the bottom of the paella pan. But it is rice, after all.

Has anyone compared this Santo Tomas bomba rice to the considerably less expensive Matiz bomba rice also sold on amazon?

Doubt there would be much difference.
