Super Super Sharp from the factory
I bought these knives for my husband who recently got hired to work as a chef. After reading quite a few reviews on knives on amazon.com and a few other websites and blogs, I decided on Victorinox because the brand has been around for awhile, they are reported to be light, maintains sharpness well and it's not crazy expensive to replace if one is damaged or stolen. My husband has been a Wustof and Henckels fan for a long time but he said they knives were surprisingly great. They are lighter and thinner than our home knives and he said he had to watch his slicing speed at first because it will slice you before you know it. He is used to them now and loves them. The bag is perfect and professional looking to carry to and from work. Extremely pleased with my purchase, especially the price because I got them from Amazon Warehouse :)

I rarely review Items, However this order warrants a few comments. On youtube there is a site called the bearded butchers, Millions watched these guys cut up an entire cow in an hour, very fascinating. on the comments down below 80% of them said OMG what knives are these guys using they are like razors. So Looked it up and sure enough these use Victorinox. Everyone is aware of the legendary swiss army knives this Company makes, and the set is no exception. well built, the rosewood handles are gorgeous and fit perfect in your hand, One review I read said the case is garbage, it is not. It is well made and a quality item. It may not last for the pro chef that would carry their knives every day to work but for the average household its perfect. I put my old knives in it and using it for my camping kit. This set will not disappoint. I also bought a drawer wood holder for them since we do not like a bunch of stuff on the counters. Highly recommend this set

Very sharp
I love the knives! They are very sharp. I wish I would have bought them individually, because the largest two knives have never been used, and probably won't be used. Started to send them back to just buy the smallest to medium. But didn't. Wished they would have just had a three pack.Best knives I have ever used, and I did some research before buying! Their price is also very good! Highly recommend!

Great for a beginner/home cook
Had these knives for over a year and they've stayed sharp. Slicing and trimming have been so easy with this set! I've heard the sharpening steel can be too rough for the set, so I plan to get a polished steel in the future. To be honest, when I first opened the knife roll, the steel didn't even look like it was part of the set and kind of seemed random. Love this set, though. I plan to take care of it and have it last!

Love it.
I've been using expensive Wusthof knives for years. Then I discovered Victorinox after 2 different butchers told me that is all they will ever use.These are not as pretty as the Wusthof knives, but they are better and cost way less. I'll never buy anything else again.I've had their boning/fileting knife for over a year now. with regular honing, it's kept it's edge sharp longer than any other (more expensive ) knives I have.So I got the set for a friend as a gift. He adores them. The set has all you need for meat butchery. Thinking of buying myself a few more Victorinox knives soon.

Not Full Tang
Only thing keeping this from a five star review is the knives aren't "full tang"; although for all practical purposes they may as well be. The metal from the blade tang extends about 85-90% into the handle. So not true "full tang" but your hand's still holding onto metal under the rosewood; unless you have giant hands. Victorinox makes a line of forged kitchen knives that do have a full tang but you'll pay almost double the price for a comparable set. The rosewood looks pretty good and should stay that way as long as it's kept out of the dish washer. Extremely sharp from the factory and the honing steel should keep it that way. All knives eventually need sharpened when that happens the worst thing to use is one of those hand held sharpeners you drag across the blade, or the version where you drag the knife between two wheels or stones. This will sharpen the blade and you can cut with it but it won't hold an edge and the honing steel won't do much. It doesn't put a proper edge on the blade and it removes a lot of extra metal; thus wearing out your knives early! I have several wet stones but if you don't want to make the investment ask the butcher at a decent grocery store how they sharpen their knives. They'll probably sharpen them for you for a few bucks.A word on the rosewood handles... Don't buy these if you plan to use them professionally! Wood handles if not properly cared for can hold bacteria. This can give you problems with health inspectors and may end up in a violation. Although not as attractive, if your going to use these in a commercial kitchen or some kind of meat processing room; buy the set with fibrox handles. Same blade with a dishwasher safe handle (still not a good idea) and about 2/3 the price. As a bonus you won't have to wait for oil to dry on your knife handles.

Great set of Knives
Great set of SHARP chef knives. Been looking for knives to compliment our cooking adventures. These knives make easy work of a pork shoulder or dicing up scallions.
