Nourish "Japanese Damascus Steel" AKA VG-10
Review of "Nourish Japanese Damascus Steel Chef Knife" (AKA VG-10)This knife is made with VG-10 Steel. This is a very big deal at this price point. I researched many high quality knives before buying this one, and found this one to be the best price (by far). VG-10 is used in Spyderco knives and high dollar professional hair sheers. The following are a couple points about VG-10.1. It has a higher carbon content than cheap knives (the ones generally labelled only as "stainless steel") This means that it is harder and holds an edge better. This also means that it chips more easily and rusts more easily. You should never leave this knife submerged in water, it will rust. You should always rinse it and dry it off after use, especially if you have been cutting acidic or salty foods (tomatoes etc). As long as you take care of it and don't abuse it, you shouldn't have any rust or chipping issues.2. If you want this knife to last, only use it on a soft cutting board. (I like soft wood). A soft cutting board will show extensive knife marking after repeated use. If your cutting board is not being damaged by the knife, then the knife is being damaged by the cutting board. Also, never put a wood cutting board in the dishwasher, it will warp and break.3. Do not ever touch this knife with the honing steel (long metal "sharpening rod") that came with your cheap knife set. Those rods are used to uncurl the edge on cheap, soft steel knives. VG-10 does not curl (it is harder steel). You will ruin this knife with that rod. True sharpening is done by removing metal from the edge. Usually with ceramic stones. Sharpening is a skill that requires good equipment and lots of practice. VG-10 does not need to be sharpened often, and the casual user would likely prefer taking this knife to a professional sharpener. Also, do not run this through the sharpener on your can opener, you will ruin the knife.4. For those of you that have never had a high quality knife before, understand that this is sharp. Very sharp. You can very seriously hurt yourself before you even realize it. Pay attention.5. The best I can tell from my research, "damascus steel" (the wavy pattern on the knife) is for the most part entirely cosmetic. The actual steel used (440a, VG-10, 9CR18, etc) is far more relevant. This knife does have the "damascus" pattern on it, and it is nice to look at.6. Having a "full tang" is also a characteristic of a high quality knife. (This knife has one)This really is a very excellent knife. I was about to say "for the money," but it is in fact a very excellent knife period. This shows that a good knife can be produced at a reasonable price.

Hard to rival for the price
Gave this as a gift to the kitchen boss of my house two years ago. It has been on the cutting board every day since. Unless she's pairing or skinning something this is the knife. Every other blade has been in the block. I don't know if it's a real Damascus steel or just a pattern, but the hardness of the blade is real, we've sharpened maybe 4 times and it's held paper-slicing sharpness. For $60 you're hard pressed to find a blade that rivals this.

BUY IT! Excellent knife and great customer service (through Greater Goods)
UPDATE! I broke the tip of my knife, as I said below, called the company about ordering a new one and they sent me a new one free in just days! 5 year warranty taken seriously. This knife is so good, high quality and under $60.I just got it today so I can't speak to durability but this is a beautiful knife and I am chopping garlic and slicing chicken breast very thin (happy dogs) and now I will work on my Instant Pot Chicken Tikka Masala. I can't believe the way it is slicing through refrigerated chicken breasts! I keep my ginger frozen, so that's next.Works great!I keep it on a magnet up high. I hone it sometimes with a steel.I dropped it on the tile floor tonight and broke the tip! I am very sad. I will keep using it and see how it goes. Surprising quality.
This is a review of the VG10 Damascus knife. They seem to sell several Chef's knives in this listing.For the price I paid I was not expecting this level of quality. It's made in China I'm sure but the steel is legit and the end result, the cutting edge, is spectacular. The knife itself is surprisingly light (similar to a Shun, heavier than a Global, much lighter than a Henkel/Wusthof). I really appreciate printing the steel type, hardness, and layers on the blade itself along with the branding. Put your name on with pride and don't try to pawn off an acid etched piece of stainless as a nameless "Damascus pattern".Straight, easy to hone, true 15 degree angle, Symmetrical handle (not right-only). The craftsmanship is flawless, really.You must hand wash this and dry it immediately or evaporation will leave water spots (like a coffee table ring). You must also hone it frequently. The edge does wander after use more than a less aggressive angled (read: duller) knife but can be fixed by a few moments of honing before use. This is not a "use it 100 times and put it in the dishwasher" kind of knife. Use a knife-friendly cutting surface like a plastic cutting board or bamboo (how do you keep the salmonella from soaking in?) If you put this through a pull-through sharpener it'll never be the same (it's intended for wetstone sharpening). If this seems like a lot to you, you've probably never worked with a knife this sharp before.

Nicely weighted, sharp no wall magnet.
Sharp knife, nice Damascus steel weighted nicely in your hand. I was disappointed to find no magnet to hang. Picture seems to show one. The corrugated cardboard with rectangular shadow cut out for storage doesn't do expensive knife justice. Bottom glued part came apart.
