The protein is often used primarily for its flavor-modifying properties and not exclusively as a sweetener.[3]The thaumatins were first found as a mixture of proteins isolated from the katemfe fruit (Thaumatococcus daniellii) (Marantaceae) of West Africa. Although very sweet, thaumatin's taste is markedly different from sugar's. The sweetness of thaumatin builds very slowly. Perception lasts a long time, leaving a liquorice-like aftertaste at high concentrations. Thaumatin is highly water soluble, stable to heating, and stable under acidic conditions.

Amazing product!
THIS WORKS INCREDIBLY WELL. I make *enhanced* gummies and was previously struggling to mask any herbal flavors/bitterness. There is only so much that sugar and citric acid can mask! Enter this Bitter Blocker. I'm still experimenting with the right amount for my recipe, but I've been adding 1 teaspoon per batch (a batch uses 1 dram of candy flavoring, if that helps you to gauge for your own recipes). It seems to eliminate 90% of the bitterness, and perhaps as I increase the amount it will get to 100% - we'll see. Regardless, I'm so thrilled to be able to find a bitter blocker that is available for consumers to purchase, as the market seems to be all B-to-B.Initially I was a little uncertain about this specific product, as it does not list the actual ingredients. However, I had researched bitterness suppressants enough to understand that the FDA allows flavor enhancers like this to be listed as "natural flavoring" - so it might be adenosine monophosphate (also known as AMP-5), a natural compound that was patented in 2003, which is likely in many foods and beverages we already eat. So after checking out the Biogenic Foods website to verify that it was a legit company, I decided to give it a shot, and I'm so glad I did. If you're unsure, definitely do your own research!

Scam, Don’t Waste Your Money!
First off here’s the actual product label showing nutritional contents they hide on the listing. I was weary because they’re so protective of their “trade secret” but I was really curious to try. It’s mostly just fiber, and a ton of salt apparently. Feels they’re being so secretive because it’s probably a commonly available ingredient sold much cheaper by its real name… also nutritional info is wrong, Carbs/Fiber are 4cal/g so this should be 4cal/g * 80g = 320 cal not 240 calThis stuff is straight up garbage. I ran several tests dissolving weighed amounts of pure caffeine with different ratios of this blocker, and none of them made any noticeable difference in reducing the bitterness, if anything it made it taste worse when I tried adding a larger ratio. You can stir all you like but this stuff really doesn’t want to dissolve in room temp liquid, so you just get these off-putting slimy clumps floating in your liquid. Didn’t try hot liquid but the directions don’t specify need for that, and that’s not how I wanted to use it anyway.Really wanted to like this product but it’s an absolute waste of money and time. Do Not Buy!

Good
Took a while to get documentation from the seller, but eventually received it. Good product, good packaging, good amount.

They do not disclose ingredients
If I could give a zero score I would. The package does not list ingredients, which is not lawful, and repeated attempts to acquire that information from the company failed.
