Medium-density fibreboard (MDF) is an engineered wood product made by breaking down hardwood or softwood residuals into wood fibres, often in a defibrator, combining it with wax and a resin binder, and forming it into panels by applying high temperature and pressure. MDF is generally more dense than plywood. (re: Wikipedia)

Q: What are the actual dimensions of each block? The description says 5x9, the photos say 3x8? And are they actually 1" thick? Or is that nominal?

They are 5 x 9 and 1” thick, nice to work with as long as the compressed wood works for your project. I will definitely order again when my supply is low.
