Never Going Back to North American All Purpose Flour
After a trip to Italy, where we learned about the differences between Italian and American flours, I ordered this product and have used it exclusively since for all baking and cooking. It has a smooth, fine texture that is similar to American cake flours. Pizza dough is easier to handle and is stretchier and softer, and it bakes to a superb crispness. Cookies and cakes have a tenderness that all purpose flour cannot deliver. And it seems that the heavier doughiness of some items (homemade soft pretzels, rustic breads, etc.) is gone, such that we can enjoy these things without feeling uncomfortable or distended in the stomach. It's not inexpensive, but it is definitely worth it if you enjoy baking.

Package Arrived with hole in the paper bag that shipper covered in a plastic bag which still leaked
Bag broken and flour leaking out. Not sure if it is contaminated but so far seems like it is ok.

Quality and Convenient
The flour is very fine as it should be. It holds up well in high temperatures making a great pizza crust. The 11-pound bag is very convenient saving you from purchasing multiple one-kilogram (2.2lb) packages as most other "00" flour is packaged. I highly recommend this product.

Best flour for crispy crust!
I am thrilled with the results using this flour. I had been using King Arthur but this took my pizzas up a level. I can get a really crisp crust all the way through. I cook on a wood fired Ooni stove.
