Great Book!
Being in the food industry, I read many books about the craft, but Surplus was an eye opening read in many ways. It was not only informative about what we can do to better our plant forward knowledge, but it captured the essence of what it truly is! I will keep this book close and I highly recommend it! I already have many Chef friends purchasing to read!

a must have bible for all chefs!
I've been looking for the ways of reducing the food waste in the kitchen in the last few years and am very impressed by the author's thought-provoking sentences in this book. can't wait to put what I read into practice. It includes great tips to use every part of an ingredient, great ideas to change your mind-set, what are the best techniques for zero-waste cooking and much more.Here is the one of thought-provoking sentences in the book: "If you make the effort to use every gram of the black truffle, you can make the same effort to use every bit of other vegetables too. If the ingredient is edible, don't call it waste."I think that this book is a must have bible of all chefs in the industry. Plus it is plant based.

The most practical and inspiring masterpiece on food waste management.
Chef Vojtech is visionary who acts and makes things happened on the cause of his WHY..The book, everyone should has not limited to food and beverage operators and professionals..It is very real (practical), organic, original, easy to read and purposeful..I have got it on Kindle version which I never complete any ebook from cover to cover but this one I did. It is simple as his food, so he cooked this cook's book with mininal processing of it. It is very tasty..Thanks so much for having this masterpiece available to us.

Good Read
Excellent read for anyone who need to keep up with ethos of managing waste, methods and various principles in management of ingredients, waste.Would recommend it to anyone who need to have sound understanding of matter.

Well worth the money! Great book by a great chef!
Great book, bought as I work in professional kitchens and want to learn to reduce waste. Very insightful and well worth a read for anyone interested in plant based food also! I will definitely be sharing it with the chef friends!
