What is the total length of the valve stem and the length from the rim to the end of the valve cap threads after installation?

On my side by side the total length is about 3/4"

When using this as a permanent stem, do I need to worry about the old broken rubber piece still inside the tire? This is my only concern.

No a couple of grams of rubber rolling around in there will not hurt anything.

Are these compatible with an ARB rapid deflate tool?

I don’t know if they allow rapid deflate. The stems are only used for an emergency valve stem replacement until a regular stem can be installed.

Will beet juice (rim guard) affect the rubber on these valves?

I have used it on 3 differt tpye of rims. If you have clear access to get the new stem in and a socked on it it will work
