Stunning book with exotic ingredients + kitchen tools
This book is drop dead beautiful. I own many cookbooks and plenty of chef / restaurant titles this is a stunner... but it's unfortunately also very aspirational. If you don't have access to a pacojet, a steaming oven, or a meat grinder then your results will not likely be restaurant worthy. Some of the ingredients include : Oysters, Sea Snails, Sweetbreads, Soft-shell crabs, Mussels, Beets, Mullets, Heart, Kidney, and more difficult to procure elements. The dessert section looks most accessible, but even then a humble ice cream maker is probably not going to suffice.Sure, I'd love to attempt to make some of these beautiful meals, which I am sure are a delight, however having access to integral parts and machines isn't probably in my future.
