This roast produces an elegantly smooth cup with floral undertones that are quite pronounced in the aroma. There is a detectable macadamia nut presence, while the finish is clean with a hint of tanginess on the sides of the tongue. Doi chaang wild civet coffee beans receive a medium-light roast to maintain the unique, complex flavors that develop while the coffee cherries interact with the civet's digestive system.

Best civet coffee I've tried, but still not worth the $$$.
I have ordered three varieties of Kopi Luwak / Civet coffee on amazon: these beans from Doi Chaang, beans from Kopi Luwak Direct, and beans from Java Coffee Co.In short, these beans were easily the best of the three I tried. Nonetheless, I don't see myself ordering more anytime soon as I can't justify the price.I brewed these beans using a variety of methods (French press, manual drip, siphon pot, manual espresso). I consumed all the bean within two days of receiving the package. I ground the beans fresh immediately before brewing each time. I tasted each coffee black, then tasted with cream only, then tasted with cream and sugar.All the different kopi luwak beans I ordered were very smooth drinking / not bitter. However, the other beans, especially those from Java Coffee Co were otherwise lacking flavor and generally boring coffee. These beans, on the other hand, were the only kopi luwak beans that were not only smooth, but also very flavorful. These produced a delicious cup that was rich, nuanced, and with predominant chocolate notes.In summary, this is the best kopi luwak style coffee I've tried. It is delicious coffee. However, I can get coffee that is just as good or better for a fraction of the cost from my local coffee roasters.

Interesting to try
This is one of the few Thai Civet coffee that is actually real and not fraudulent. What I found is that this Civet coffee is actually regurgitation and doesn't pass through the bowels of the cat. This is why it is $40 for 2 oz and not $80 for 2 oz. The coffee was an experience. when it goes through the bowels it is supposed to not be as acidic. I feel that there was more acidity on my tongue, probably because the way it came back up.

I actually did it just for the novelty, but I am not lying when I say it is the best coffee I have ever tasted. Call it placebo or I liked it because I knew how much it costs and willed myself to like it, but I liked it nevertheless. I'm going to try some of the other brands and see if it's a fluke. The bad thing is that they don't have this on Amazon anymore and now I have to pay WAY more from their website to have Doi Chaang as a contender against the other brands to see which is the best. Dang it!Also buying this for my cousin for a gift - the box is a nice touch.

BEST COFFEE EVER
I have purchased Civet coffee before and after watching how the process was done I decided to try this one. I have to say I am impressed with the boldness it produces. I also feel great about helping the DOI CHAANG tribe. I had no idea these people were opium farmers to begin with. If you have not watched the documentary you should before you judge. These cats are beautiful and very majestic creatures. I support Civet coffee all the way.
