Grainy texture
I've tried a few different carob powders in my lifetime but this has the grainiest texture I've ever had and seems to stay behind in your mouth/throat somewhat. I usually use in just a plain glass of milk. It has a heavier malty taste than most which could work in certain recipes if that's your desire. I'm just not a big fan and would rather it taste more like "chocolate".I thought this might be raw carob because of its light color as the raw has more nutrient content (dark is roasted) but I couldn't find it stated on the package so not sure how it was processed. I wanted to like this but it doesn't compare to the smooth texture and taste of the Australian raw carob I usually purchase. For the little price difference I'll spend the extra on my usual.

IT'S QUITE TASTY... BUT IT TASTES NOTHING LIKE CAROB!
I've had now nine or 10 brands of carob, with various roast levels, including unroasted. Now, given none of those were from the Americas (they were all from mediterranean, africa, or australia), that could lead to some differences. But trust me, if you've EVER had carob-flavored ANYTHING from an off-the-shelf bar, to a dessert or milkshake... this stuff tastes NOTHING like that. I can't quite describe this stuff, but the best I can do is to say it's something like peanut butter and vanilla together. I could totally use this as a peanut butter flavor substitute for someone with peanut allergies... BUT BUT BUT would NEVER use this as a chocolate/cocoa/cacao substitute. For reference, at any given time I have at least a few different brands of carob powder around, and at least 8-10 (often more like 20) different types of chocolate.
