Uh, shyeah!
It's winter again and you all know what that means... OVEN TIME!A friend of mine had recently alerted me to the existence of these newfangled silicone thingies so I decided to give one a try. I've been roasting vegetables with mine (cauliflower, sweet potatoes, brussels sprouts, etc.) and my Cuissential SlickMat has been working out great. The veggies turn out pretty much the same as if they'd been roasted on foil -- same cook time, same level of caramelisation. One nice plus is that the tasty caramelised bits don't stick to the cooking surface and I can just slide them on to my plate (and into my mouth, shyeah).Cleanup is easy with some warm soapy water. So far, no discolouring or any other visible change. I haven't used the SlickMat for baking desserts or roasting meat and can't say what the results would be. I plan to try, though.Very happy so far with my purchase. It's also nice to cut down on waste from using all that foil. Shyeah!+++UPDATE (26 Jan, 2012):I've been roasting a butt ton of veggies with the SlickMat and have noticed that it's starting to retain the odour of the last item cooked, despite a thorough wash with warm soapy water after each use. Not exactly a big problem at this point, but let's see how things go.+++UPDATE (11 Apr, 2012):The SlickMat is still working great, but I would definitely advise against using the same one for all your baking/roasting. So, one each for veg, meat, sweets, and so on. It's no big deal if the SlickMat smells of brussels sprouts if you're going to roast cauliflower or eggplant next, but it might not go so well if you were to put on a batch of cookies. Also, the mat has taken on a bit of colour from the roasting, that can't be removed even with repeated washing with warm soapy water. I'm not too worried, but know that it's something to expect.

Works perfectly- size is a little strange
This mat is great for people who bake and do not want to constantly be using and discarding parchment paper. It is easy to clean and the cookies that I have made just slide right off. The only reason there are not 5 stars is the size of it. It fits in my standard cookie sheet, but is not long enough to cover the whole sheet, so I feel like I am actually wasting part of the cookie sheet. If I'm going to store the fairly large rectangular cookie sheets, I would like to be able to use the whole thing!

STICKY nonstick Sheet!
I just opened Cuissential StickMat I ordered from Amazon. Taking it out of the plastic wrapper it comes in, I found it to be VERY STICKY and TACKY. I WILL NOT be using this mat. Yes, I know it must be washed before using. My husband, a top chemist in the nation for over 30 years, examined the mat and said, "If I were you, I would not use this. Just because it's FDA approved doesn't mean a lick sometimes. This mat seems like the silicone is breaking down. We don't want that in our food!"So, I am returning the mat to Amazon, and am returning to very inert, always reliable Parchment Paper!

I bought for kneading dough. It is too small. I never use it for baking. If you compare with silpat, this is not well made, but it is ok item. I will not buy it again.....

too short for 1/2 baking sheet, too big for 1/4 sheet
I didn't notice that the measurements are too small for a half-sheet baking pan! Most half-sheets are 16-18" long and this mat is only 15". My awesome Nordic Ware Bakers Half Sheet is 18" -- so this leaves a 3" gap at the end of the pan. Super annoying! And it's too long for my quarter-sheet pans. It definitely works well but the size is frustrating for me as a baker and someone who frequently makes things like roasted veggies and granola -- they inevitably spread out to the pan itself, resulting in stickiness and required clean-up. The Silpat mats are 16.5" long -- much better in terms of length.

Meets all Expectations
I researched many of the different brands of baking mats and decided on this one. I purchased it a few months ago and have used it extensively with different foods at different temperatures up to 475 degrees. The result for baking cookies is no brainer -- I believe all of the mats handle baking cookies at an optimum. It has also passed the test for sticky foods (frozen chicken wings), breaded items (keeping the crisp in the breading) and doesn't affect the taste or quality of the food. Using the mat is much healthier for our family (no use of oil or sprays) and saves us money (using aluminum foil adds up). Clean up is fast and easy, and I don't have to mess with washing and drying bulky baking pans and cookie sheets. Storing the mat flat in a drawer is easy and convenient The surface of the mat is accumulating some brown spots on it, but they don't affect the taste or quality of the food -- I'm viewing them as "seasoning" a pan. I'm more than delighted with this product.

Great value on essential kitchen item
Now that I have silicone mats I don't know how I lived without them. No spraying my baking sheets any longer and building up that residue that over time turns your pans brown and sticky. My first silcone mat was a Silpat made in France. I was very happy with it but realized I needed a second one. Saw the Cuissential on Amazon and decided to trust the good reviews even though the price was so much less than the Silpat I figured it might disappoint me. Well, I love the Cuissential! I consider it every bit the quality of the Silpat. Cleanup is a breeze, just wash the mat down with soapy dishwater, rinse, and wipe dry or let air dry. And your baking sheet just needs a quick wash for cookie crumbs when you're done baking, no residue like before to scrub off. And the bottoms of cookies are never darker than the tops, browning is very uniform. This mat should be in everyone's kitchen! And if you are going to buy one, I'd get two if you plan to bake batches of cookies. These sheets seem to retain heat a bit longer than the pan alone does. I grew impatient waiting for the pan to cool for another batch, wanted to be preparing another batch while the first one baked, so decided to buy a second mat. At the price of the Cuissential compared to the Silpat you can indulge yourself and get two at once. Happy Baking!
