Q: Would this be good for storing distilled water long-term?

you may be able to store distilled water long term, but I am using these carboys for distilling apple wine. The work great for that purpose.

Q: Has anyone noticed the sides becoming hazy? Did my first batch of wine and after cleaning the top wall and bottom are a little cloudy now.

I've not had that experience. Is it from the stabilizing & clearing process you are using? We use a drill w/the attachment so it gets a little scratched up on the sides but not hazy. Also, make sure you are using water & sodium/potassium metabisulphate. Don't use soap
