I use it to make our monthly pizza dough. When I originally bought the Ez Doh I had the plastic crank. I have since gotten the metal crank and it is so much better. The Ez Doh website sells the metal crank. John, the owner of Ez Doh is so nice. He acquired the business a couple of years ago and decided to upgrade the crank to metal at that time. TERRIFIC idea. The dough hook itself is stainless steel so nothing can hurt it. The bucket is dishwasher safe, but I recommend putting it on the top layer of your dishwasher because experience shows the color graphics on the bucket can fade if washed on the bottom rack. I just wash mine in the sink because the bucket and dough hook clean up easily, and the other parts generally do not require any cleaning. The dough hook was the 'weak link' in the original design, which is why that was converted to stainless steel. You can use most 3-5 cup (of flour) recipes. If you are using 100% whole wheat flour, you need to keep the recipe to 3 cups of flour. Thanks for your inquiry! After mixing/kneading the ingredients and forming the dough, I recommend unscrewing the 2 side knobs that hold the mixing attachment to the container and removing the dough. I then lightly oil the container and return the dough to the container to let it rise in a warm spot with a towel or plastic wrap covering the container. You could just let it rise in the container with the mixing attachment still in place, but then you'd still need to remove those 2 side knobs and the mixing attachment after the dough rises. I think it's easier to separate the dough from the dough hook after mixing rather than after letting it rise....but it could be done either way.
