I am wanting to attach an old watch face to a leather keychain as a sentimental gift. Would this allow for the leather to stick to those surfaces?

I would not recommend what you suggest. This adhesive needs to be absorbed into a porous material like leather to adhere. Metals, glass and many plastics are not porous enough to get good adhesion. A urethane adhesive like gorilla glue would be a better choice.

Is it flexible? I need to glue snakeskin back to fabric on the shoe in the bend area. Will it crack?

It should remain quite flexible in thin sections such as your snakeskin. Make certain the area to be glued is clean and dry and wipe off any excess glue.

can I use this product to attach a diabetic alert patch to a small leather gun carry bag?

Assuming the patch is cloth, I don't see why not.

How does this compare to aleene's leather & suede glue? i need to glue two pieces of leather together

I have not used Aleene's leather and suede glue but the Eco Leather Weld Adhesive worked great on my relatively thin leather jacket. I had about a 4" tear and you can hardly tell it was there. It has been through a number of rain storms and there are no signs of it failing. I hope this helps!
