It's sugar in the shape of pearls
As I had never used pearl sugar before, I don't know if this is any better or worse than other pearl sugar. It is sugar that is formed vaguely in the shape of pearls. The Lliege waffles that I made with it came out well; making Lliege waffles was another first for me, so I do not know whether other brands of pearl sugar might have worked better. While the price seems kind of high for what is essentially just pearl-shaped sugar balls, this seems to be the going market rate for pearl sugar, which is probably a good thing because while Lliege waffles are delicious and not terribly difficult to make, they are not healthy food, and the relatively high cost of pearl sugar may keep me from making them more frequently to the detriment of my generally clean eating regimen.

Super crispy
Had never heard of this product until reading recipe for waffles. I added a few fingertip fulls into regular waffle mix and the results were amazing. Crispy and sweet!

Heavenly waffles
This oroduct was exactly as described. I had previously attempted to make Leige waffles with another brand of pearl sugar. I found this product to have superior melting qualities. I followed the recipe on the back, cutting the proportions in half. I found the waffle dough to be challenging to mix. Next time I will use the dough hook on my mixer. I used pasteurized eggs and let the dough rise overnight. The sugar is easy to mix in with bare hands. These waffles taste heavenly. They are quite rich, dense and very sweet. I just served them with fresh berries. I think maple syrup would be too sweet. I have a waffle iron with a nonstick interior. After the first waffle, the pearl sugar starts to carmelize and accumulate on the waffle plates. It gives the waffles a lovely crispy glazed exterior. Best part of the waffle! I would definitely serve these as a dessert, as well. I didn't clean my waffle iron while it as still hot. When it cooled, the sugar as baked onto the nonstick surface. I poured a few ounces of hot water on the bottom plate and the sugar dissolved in less than 5 minutes. I turned the waffle iron upside down so the top plate was on the counter and repeated the process. Leige waffles are a little more work than normal waffles, but oh so worth it!

These little opaque white sugar pellets hold up during baking, keep their shape, their color, and their crunch. A prop garnish for many Euro pastries like Brioche Sucrée and Colomba Pasqua, Italy's traditional Easter Dove Cake (see photo, though not in traditional dove-shaped pan). Thumbs up.
