The hot dogs that Chef Reynaud writes about are truly French sausages, not your typical American frankfurter. He has numerous recipes for the various, common sausages produced throughout France. He typically uses crusty rolls for the sausages with very inventive toppings.The book is beautifully illustrated. I formerly owned a gourmet hot dog and sausage restaurant and I utilized some of his recipes for weekly specials. Customers were amazed with the final product and you will be too!
