Were these chestnuts boiled or roasted before pureed?

I don't know but when I was a child in France, WE BOILED THEM before puree. Roasted they would be too hard and impossible to handle. Depending of what you want to do, you can add cream ( sweet or not) or juice/gravy. Good luck

How long is the shelf life after the can is opened?

I don't know; I used mine all at once. I would definitely refrigerate it. I would think that mixing in some sugar might help preserve it longer.
