You'll Reach Past Your Old Knives for this one.
This Knife is a very good little knife. It's a little bigger than a steak knife and It was the first Shun Knife I've ever bought. I am glad I bought this one first because it gave me an idea of the quality of these knives before I dropped $100- $150 on a knife I was not sure about (I just bought the Kiritsuke Knife 8" which I really like BTW).Now, I have owned many Kershaw pocket knifes thru the years, so I figured I would also like these because the parent company of both these brands is KAI Cutlery ltd. I was right. The VG-max is a very high quality steel, and the Damascus finish really makes this knife stand out . It looks good and performs even better. It was a pleasant surprise how light and thin this knife is. and to say it came razor sharp is an understatement (It's scary sharp). Anyways, this is a great little knife for just about any kitchen cutting tasks and I find myself stretching this knife to tackle things that I really should use a bigger bladed knife for, but it has kept it's razor sharp edge so far and I'm always very satisfied with how well it performs.I have owned this knife since March 23, 2016 and have not even thought about Sharpening it yet (I did strop it a few times). This knife gets used just about daily for any number of tasks. I ALWAYS hand wash this knife, and I gotta say It's stayed razor sharp and looks just as nice now as the day it arrived.

ultra-sharp, well balanced, beautiful
This is probably the most beautiful and easiest to use knife that I have ever owned. It looks like a piece of art due to its design and materials. I actually have a higher line Premiere Shun, a seven or eight inch Japanese chefs knife, which is more decorative. It has a chestnut colored, capped handle and a hammered blade with a swirling grain. However, it lacks the simple elegance of this knife and is not as much fun to use. I mainly use this knife to cut tomatoes, vegetable and flat breads. It handles beautifully and cuts easily and quickly. I did cut myself the first time I used it as I didn't realize how rapidly it would slice through vegetables. As the company advises, you really have to know where your fingers are at all times. However, I quickly became used to it. I purchased Noble knife guards to protect the blades and improve safety.

Japanese craftsmanship
A great every day knife, length is just right for many kitchen tasks. The handle cross-section isn't exactly circular or even oval - it's a bit angular - but still feels great in the hand. If you haven't used Japanese knives before, they are more delicate but (in my opinion) are sharper and cut more easily than German knives, as a general rule.

Gorgeous knife; well-balanced; great price!
The Damascus steel pattern on the Shun Classic line is a little more subdued than the pattern you see on the Shun Kaji line. But there's actually more layers in the Classic--69** layers opposed to the Kaji's 65 layers. (I think the look is different because of the metal content and the way the surface is blasted, then polished.) But this Limited Edition Classic knife, with its special price, is every bit as beautiful as the other Classic line knives. This picture here does not do this knife justice! The bottom of this knife's handle is finished off differently. It's a shame that you can't see a bottom view: There is a circle of metal showing. The picture here almost gives the impression that the knife handle looks unfinished. But that is not the case. Together with the grain of the dark Pakka wood, the look is elegant. It almost appears that the knife's handle is round. It is not round. It is a sort of lopsided gently curved isosceles triangle. (In the description above, they call it a D-shape, so picture a combination of those shapes.) It fits so well in the hand. It's edge has a 16 degree angle, each side, for a total 32 degree angle. I called to make sure I could sharpen this blade with my Chef’sChoice 15 Trizor XV EdgeSelect, and was told that the one degree difference would not adversely affect this blade. (The Trizor XV puts on a 15 degree edge.)Bolster is hot forged/welded. There is a full tang. The finish is blasted and polished. This knife is nicely balanced, as it seems all Shun knives are. Glad I chose this paring knife!**34 on each side, plus the base piece in the middle.

Great paring knife!
Excellent knife that is extremely sharp, lightweight, and the wood handle has a great grip even when wet. This is a great buy compared to the more expensive Shun Classic paring knife. Apparently the only difference is the metal cap on the end that is missing on this model.

Do not chop! Ignore me. I know nothing.
First two pics are July 2021. The other two pics are May 2020, when I received this knife. With the correct use and care, it’s a great knife. Slice and glide-carve, do not chop. Clean with non-acid based soap and dry immediately. NO DISHWASHERS! This a bargain. Use it wisely, or not and complain like a someone who doesn’t read instructions. Either way, love this knife and Amazon is going to the moon :)

A little different than rest of the classic series
Great knife. Sharp as can be.Only disappointed because I didn't realize when ordering that the "limited edition" Classic paring knife does not have an integral end cap like the rest of the Classic line so it doesn't match with my other Shun Classic.Still well made, comfortable and sharp as "hello"! Just not quite what I was expecting.

Love this knife!
Love everything about it- how razor sharp it is mainly, but also the look and the feel of it. Perfect balance, handle is comfortable, and it's a real pleasure to use. Cuts better than any knife I've ever owned. Just be careful with it- I cut a nice gash into my finger using it- the cut was so clean I hardly felt it. Would be good for doing minor operations with, it's that sharp.

Beautifully layered damascus steel polished to a high sheen this ...
I have been replacing all my kitchen knives with Japanese versions for a while and this little paring knife was the last one. At 4 " a little large for a paring knife but not too large, my wife loves smaller knives for everything so this is sure to be her next utility knife. Beautifully layered damascus steel polished to a high sheen this knife a a small work of art. It has a full tang running through the dark wood handle for extra strength. The blade is slightly offset favouring right handers, but not so much left handed people would notice much. It arrived sharp and like most Japanese style knives had a nice 15 degree double bevel edge. A pleasure to use. You don't need a knife this good, but once you see one you will want a knife this good.
