What is the scoville unit on these pepper flakes? What peppers are used for this product so that I can determine the heat level?

I have no way of measuring scoville units but I would rate this pepper as medium heat that few people would deem too hot. The peppers are red peppers. .

Are these flakes or ground crushed red peppers?

They are very finely cut crushed peppers. They are not as smooth as cayenne powder and not as coarse as regular crushed peppers. They do have a nice fresh red pepper smell. I use it as I would use on top of food ready to eat as Pizzas and soups and as a powder spice in my cooking of curries.

Is this product grain free and sugar free

As far as I can tell, it only contains red pepper flakes, nothing else. I use it on everything where I need a little heat. This is great for pizza, you will have the heat without the seeds that usually come with red pepper flakes. I do recommend it.
