009: The APICE OF MATURITY 2009 closes a prodigious, sunny, bold and generous decade. This continuation of favorable weather conditions is unprecedented and the succession of the Millesimati has allowed us to explore the new borders of ripening grapes in Champagne. Dom Pérignon Vintage 2009 is the result of two movements: one is guided by nature and the other is the creative ambition of the Chef de Cave of the House. This synergy allows you to taste the most mature and richer fruit, grapes at its best moment, promise of a wine full of freshness and energy. NASO notes of guava and spicy green grapefruit zest blend with fruit with hazelnut, white peach and nectarine. The wine breathes, all is complemented by notes of woody vanilla and gently roasted warm brioche. The fruity notes are majestic, ripe, fleshy and deep. Beyond wealth and a certain will, it is the impression of consistency that dominates. The intensity is extraordinarily low. All sensations converge and persist, silky, saline and lymphatic, bitter and iodate. The Dom Pérignon Vintage 2009 is a wine that needs stimulation. It requires a context and lends itself to be enhanced by strong contrasts. Champagne evokes the world of plant and minerals, which manifest themselves through a charcoal with sea hedgehogs with cardamom mousse. Works perfectly with special consistency dishes: for example, octopus skipped with marinated butter in Sicilian orange juice.
