It is sweet, thinly sliced young ginger that has been marinated in a solution of sugar and vinegar. This is often served and eaten after sushi, and is sometimes called sushi ginger. Ginger has antiseptic properties, and was originally eaten with sushi to counter the ill effects of bad fish. Pickled Ginger 16 oz

Some of the best I have eaten
This is hard to find where I live but this stuff is great. Learned to eat and enjoy it on a trip to Japan and it ecceded my expectations. I will order more when this order starts running low.
