The sensor inside is fast but the metal probe must have time to change temp. Similar style kitchen thermometers advertise 6 seconds, but that is specific to the conductivity and thermal capacity of meat and typical difference between a starting room temp(70f?) and typical 160f food. I would expect still air to take much longer and flowing air in the middle. Flowing low viscosity liquid may be a bit faster. Also do you need to wait for those last few degrees or just get a ballpark reading. **Q: Has anyone used this to measure lawn soil temp for landscaping?** A: It's a Klein and it's a thermometer! I don't think many people will take an expensive unit like this and use it to measure 'lawn soil temp'! Dude, use your wife's turkey thermometer for that since it's not really a big deal! **Q: Is there any reason to not use this product for culinary? It seems targeted to construction, etc....but looks like it would be great for cooking/bakin** A: I use the probe all the time when cooking. It's also great for measuring the outlet temperature of your house or car air conditioner system. **Q: Does this thermometer come with a calibration certificate?** A: Regarding using boiling water to calibrate -water does boil at 212 F / 100 C -AT SEA LEVEL.
