Valuable Book; Innocently Deceptive title
La Cuisine Creole is a well-produced book.However, at the time Hearn was collecting his recipes, New Orleans was at a low point for appreciation of Creole culture. Most of Hearn's collection is more typical of English Southern cooking than Creole. For the practical cook, the books of Leon E. Soniat: La Bouche Creole (1990) and La Bouche Creole II (1998) are much more helpful.

Good Book to Read, Not sure about for cooking
I thought this was a great book for my heritage and maybe try a few dished from the book. Well I found out its more fun to read and see how women cooked in the 1800's then it is to actually cook a dish from this book. Where would I get squirrels for squirrel pie anyways? Fun book to have in the book case.

This is the first Creole/Cajun cookbook ever compiled, and some of the best of New Orleans cuisine of the times is presented. Worthy of an addition to your Creole/Cajun/Louisiana library for the history, and of course, some of the recipes that remain unchanged even to today.

Cookbook?
I was looking for recipes, but also some history behind them. It is just a cookbook for the late 1800s

Looks cheap
I gave this as a gift and almost wanted to return it back but I ran out time and had to apologize for it's materials and design. It's cheaply made but I just don't know the contents if it's worth the price.

J'avais vu ce guide dans un documentaire sur la cuisine cajun. Déception! C'est davantage une description de plats qu'un livre de recettes. Aucune proportion, méthode . Bref, pour faire de la cuisine cajun, ce n'est pas ça.
