For standard shower head extension, do i need 1/2" npt or 3/4" npt?

Most of standard shower head is G thread type. This is NPT thread type. Please check your threaded type.

If I cut this in half would the now unthreaded ends work with sharkbite 3/4 push to connect fittings?

Most Shark Bite push on fittings would not work on this application . They are made for PVC, PEX, and Copper which are a different Outside Diameter. You can find Compression fittings that could fit the pipe.
