Superb quality, excellent shelf life, no real drawbacks.
I purchased this product back in November 2014 while on a low carb diet stretch.Having misplaced two bags of this product from my Amazon shipment, I finally uncovered them last week on a shelf in my basement (which is usually cool but fluctuates based on season). Since the sell by date showed October 2015, I decided to open up one of the bags to evaluate - and it seemed to be like new.As far as shredded coconut goes, this is a stellar product that provides great value and should last a long time if kept in reasonable conditions. The coconut flakes themselves have a slight moistness and sweetness that should satisfy many cravings on an Atkins / ketogenic diet, for which they are ideally suited based on low net carbs and decent calorie content (two net carbs and 100 calories per three tablespoons). As a small bonus, the flakes also have some medium chain triglycerides (MCT) to give a slight boost into ketogenesis. Besides low carb, I'd keep this product in mind if I ever wanted to try a paleo diet.Since rediscovering these flakes, I've used them in smoothies and baked goods. It's incredible how versatile they are.My only qualm is that the product isn't actually organic, but that's self evident and isn't a knock against it. Its closest organic counterpart I could find on Amazon, Let's Do Organic Shredded, Unsweetened Coconut, 8-Ounce Packages (Pack of 12) , costs about $0.38 per ounce while this product costs about $0.28 per ounce.If I continue to use coconut with more consistency than I did the last time I ordered this product from Amazon (which was mainly for a limited low carb run), I'll probably seek out and try a smaller quantity of the Let's Do Organic product in a store before buying in volume. But for now, I feel Bob's coconut flakes more than meet my need and I'd be comfortable recommending them to anyone who isn't actively seeking out an organic product.

Makes wonderful coconut milk
This makes wonderful coconut milk. Each bag (there are 4) contains approximately 4 cups of shredded coconut and makes over 1/2 gallon of coconut milk. I make the milk in 1 quart units to use in my smoothies and store it in the refrigerator in a glass jug. When I retrieve it from the refrigerator, a thick layer of wax-like coconut fat has formed on the surface. I break it up with the tip of a knife blade and toss it in my Ninja along with the rest of my ingredients. It is the coconut fat I am after, and I like having visual proof that it is there. The coconut milk-in-a-box that I tried before did not do this, either because of the additives or because there was not much fat there to begin with.. I quit buying the packaged stuff because of additives, but I prefer the taste of my home-made stuff which is also far less expensive.

Great product
It is SO hard to find unsweetened coconut. That's why I order this product from Bob's. This is a fairly small shred - I might prefer something larger, but again, I don't want a sweetened product. I attached a picture for you, with a chocolate chip to give you an idea of the shred size. You should know that the coconut is not soft or chewy like the sweetened products.I stir this into my morning oatmeal and love it in my chia pudding. I stir some into my plain Greek yogurt to add fiber and texture. It seems more filling this way.I have not toasted it yet, and think that will add to the flavor.I have such confidence in Bob's products. I highly recommendMy only concern is that I have to buy such a big lot of it ... really 4 bags! But the price is so good, After I open a bag, I pour the rest of into a large glass canning jar and keep it in the fridge. It has stayed fresh so far. I'll just stick the other bags in the freezer until needed.

Expired 3 weeks after purchase
I bought this product mid-September of 2021. I put it in the fridge and never looked at it again until today. I was looking for nutrition data and saw the “Best By” date, which was only weeks after my purchase. Worse, the apparent production date was almost a year and a half *before* my purchase date. The bag sat around for over a year before I bought it.Now I suppose that’s on Amazon. I’ve certainly been a fan of Bob’s Red Mill products for years, which is why I chose this specific item. But this seems to me a big disconnect. Either shredded coconut is a rarely purchased item (seems unlikely but who knows) or the bag fell behind the warehouse shelf and was only recently found. And then dumped into my delivery box.Maybe this is a one-off problem and rarely happens. But it did happen to me. So this bag, and the “milk” I just made, will get dumped in the green waste bin and I’ll be looking for another source of shredded coconut.

Delicious to eat alone, as a topping and to bake with!
I love all Bob's Red Mill products but their coconut is definitely something we always have in our kitchen. This time around I used the shredded coconut AND Bob Red Mill oats in a super easy cookie recipe. I'll list it out below. You won't be disappointed by this product!1.5 cup Bob's Red Mill Oats2 ripe bananas1/3 cup mini chocolate chips1/2 cup Bob's Red Mill Shredded CoconutPreheat over to 350, mask bananas and mix in oatmeal. Add chocolate chips + coconut. Place on cookie sheet (these will not expand) and bake for 15-20 minutes. ENJOY!*I have partnered with Bob's Red Mill in exchange for an honest review.

Not sure what the difference is between shredded and desiccated ...
Not sure what the difference is between shredded and desiccated coconut, this works well with recipes that call for either or just sprinkled on yoghurt.
