Yummy, easy, good for you bread!
I was looking for some good flour to start making my own bread since it's so expensive to buy. I usually eat ezekiel bread which has a high content of spelt and couldn't find ezekial flour mix. Made my first batch last nite...yummy! Used "very simple spelt bread" recipe from Recipes.com - easy peasy...I don't bake so this was perfect for me! As far as the cost to make vs buy...I think it comes out the same. I may look into the 25#bag to get the costs down. But this is a better, fresher, right out of the oven, add what you want, loaf of bread you can make yourself! I may add walnut and cherries next time. [...]Ingredients8 cups spelt flour1/2 cup sesame seeds1/2 teaspoon salt, or to taste1 tablespoon blackstrap molasses2 teaspoons baking soda4 1/4 cups milkDirections1.Preheat the oven to 350 degrees F (175 degrees C). Grease two 9x5 inch loaf pans.2.In a large bowl, mix together the spelt flour, sesame seeds, salt, molasses, baking soda and milk until well blended. Divide the batter evenly between the prepared pans.3.Bake for 1 hour and 10 minutes in the preheated oven, or until golden. Placing a tin of the same size over the top of the loaf while baking gives it a lovely crust.

Fresh and Delicious -- Worth the Price
I prefer spelt to regular whole wheat flour because of the flavor and beautiful golden color spelt lends to baked goods. Spelt also does not have the bitterness of whole wheat flour and seems (to me at least) to be easier on the digestive tract.Because the Arrowhead Mills spelt flour has irregular availability in my area and somewhat irregular freshness, I decided to try a different brand. So, despite the difference in price (roughly eighty cents/pound) I decided to try the Grain Brain brand. I found the Grain Brain organic whole spelt to be of excellent quality. The flour was fresh and very obviously "whole" grain (lots of visible pieces of grain in the flour), with no trace of rancidity. I'm getting ready to order again and see if the quality holds.

Made the most delicious bread in our bread machine!
This made a loaf so wonderfully fluffy and tasty, my husband said it made the cost of the bread machine worth it. Love!(We have a zojirushi virtuoso plus bread machine and I used the following recipe:4 cups of this spelt flour, 1 tablespoon vital wheat gluten, 1.5 teaspoons sea salt, 2.5 teaspoons of instant yeast, 1 cup of water, 2.5 tablespoons of maple syrup (or blackstrap molasses or honey), 3 tablespoons of olive oil...make sure to get liquid ingredients to 105-110 degrees (F) and put them in first, then dry ingredients and make a little divot in the top of the flour for the instant yeast...put on whole wheat setting (course 2).)
