I ordered the container with the wrong lid. How do I order a different lid?

You can order the lids separately. I like the silicone lid better but ordered the hinged lid not knowing I had a choice. Just click on the link for the brand and you'll find separate listings for the lids.

will 12 quart too big for a single family ? I usually sous vide 1-2 pack at a time

It's a little overkill for 1 or 2 packs at a time but it's not too big to get one in case you may want to sous vide something like a small to medium sized roast.

Can I get just the lid only with the cut out in the center?

No. The cut out must be along the edge in order to clamp the machine in place. The lid alone would not support the machine.
